Spaghetti With Spinach and Walnuts

- 300 g spaghetti
- 2 tablespoons oil
- 50 g walnuts
- 4 leeks
- 15 g butter
- 180 g spinach
- 50 g sultanas
- 50 g cheddar cheese
- 50 g mozzarella cheese
Directions

1Add the spaghetti to a large pan of boiling water.

2Bring back to the oil and simmer fast for 10-12 minutes or until just tender.

3Heat the oil in a large pan and cook the walnuts for 1 minute until crisp.

4Remove the nuts with a slotted spoon and set aside.

5Add the leeks and butter to the pan and cook over a medium heat, stirring often, for about 8 minutes, or until the leeks are soft.

6Add the spinach and sultanas and stir until the spinach wilts.

7Season.

8Drain the pasta and return to the pan.

9Add the spinach mixture and walnuts, then toss together.

10Divide the pasta between 4 bowls.

11Serve sprinkled with the cheese and seasoned with black pepper.
