  • 1/4 c. oil
  • 5 chopped green onions
  • 2 large potatoes, boiled, pared and diced
  • 4 eggs, beaten lightly
  • salt and pepper
  • 2 Tbsp. green pepper, chopped
  • 2 cloves garlic
  • minced parsley

    In skillet cook garlic buds on low heat to flavor oil.

    Remove garlic and discard.
  3. 3
    Add to oil the diced potatoes, onions and green pepper.
  4. 4
    Stir and cook over medium heat until pepper and onions are tender.

    Add salt, pepper and eggs.

    Cook over low heat until eggs are set around edges, 10 to 12 minutes.
