- 1/4 c. oil
- 5 chopped green onions
- 2 large potatoes, boiled, pared and diced
- 4 eggs, beaten lightly
- salt and pepper
- 2 Tbsp. green pepper, chopped
- 2 cloves garlic
- minced parsley
Directions

1In skillet cook garlic buds on low heat to flavor oil.

2Remove garlic and discard.

3Add to oil the diced potatoes, onions and green pepper.

4Stir and cook over medium heat until pepper and onions are tender.

5Add salt, pepper and eggs.

6Cook over low heat until eggs are set around edges, 10 to 12 minutes.
