Ingredients

  • 6 slices bacon
  • 1 small green pepper, chopped
  • 1 onion, finely chopped
  • 1 (28 oz.) can tomatoes, cut
  • 1 c. water
  • 3/4 c. long grain rice
  • 1/8 tsp. black pepper
  • 1 Tbsp. brown sugar
  • 1 Tbsp. Worcestershire sauce
  • 1 tsp. salt
  • 1 tsp. chili powder
  • dash of Tabasco sauce

    Cook bacon until crisp.

    Drain on paper towel; crumble and set aside.

    Drain fat from pan, reserving 2 tablespoons of drippings in skillet.

    In drippings, cook onion and green pepper until tender.

    Stir in undrained tomatoes, water, rice, brown sugar, Worcestershire sauce, salt, chili powder, black pepper and hot sauce.

    Cover.

    Simmer about 30 minutes or until rice is done. Top with bacon. Sprinkle with shredded cheese, if desired.
