Spanish Rice

Ingredients

  • 3 c. rice
  • 2/3 c. oil
  • 1 onion, chopped
  • 1 small can diced chilies
  • 1 tsp. hot jalapenos, diced (more if you like hotter)
  • salt and pepper to taste
  • 2/3 can tomato sauce
  • garlic powder to taste
  • 1 packet chicken broth
  • 1 c. hot water

Directions

    Brown rice in oil halfway.

    Add onion and pepper and finish browning.

    Dissolve chicken broth with water.

    Add to rice, also tomato sauce and seasonings.

    Add approximately 2 cups more water to cover rice.

    Bring to a boil, then reduce heat and cook for 15 to 20 minutes.

    Let sit 5 minutes.
