  • 3/4 c. chopped green pepper
  • 3/4 c. chopped onion
  • 1/4 c. oil
  • 1 c. rice (regular or long grain)
  • 1 1/2 c. water
  • 1 tsp. chili powder
  • 1/8 tsp. cayenne red pepper
  • 1 can stewed tomatoes

Directions

    Brown rice, green pepper and onion in oil in large skillet. Add remaining ingredients.

    Cook 30 minutes until liquid is absorbed and rice is tender.

    Do not stir or uncover for best results.
