- 6 slices bacon
- 1/4 c. chopped onion
- 3 c. cooked rice
- 1 (16 oz.) can tomatoes
- 1/8 tsp. pepper
- 1/4 c. chopped green pepper
- 1 1/2 tsp. salt
Directions

1Fry bacon in a large skillet until crisp.

2Drain off all but 2 tablespoons fat.

3Stir in onion and green pepper.

4Cook and stir until onion is tender.

5Crumble bacon; stir in remaining ingredients.

6Cook, uncovered, over low heat for about 15 minutes. Preheat oven to 400°.

7Pour mixture into greased 1 1/2-quart casserole and bake 25 to 30 minutes.
