- 1 c. uncooked rice
- 2 c. tomato puree
- 2 pimentos
- 1 small yellow onion
- 2 tsp. oleo
- 3 c. water
- 2 tsp. salt
- 1/2 c. grated cheese
Directions

1Wash rice, add to puree and water.

2Cut the pimento and onion into pieces and with the salt and oleo, add to rice, puree and water.

3Boil together for 5 minutes.

4Place in casserole and bake 1 hour at 400°.

5Sprinkle cheese over top and brown.
