- 6 medium potatoes
- 3 to 4 eggs
- 1 medium onion (optional)
- salt
- pepper (black)
- vegetable oil
Directions

1Peel and slice potatoes.

2Dice onion.

3Place into a deep frying pan with about 1/4 cup vegetable oil.

4Cover and cook on medium heat until well done.

5Beat eggs.

6Remove potatoes from oil and drain.

7Blend potatoes and eggs thoroughly, adding salt and pepper to taste.

8Drain excess oil from frying pan.

9Place ingredients in the frying pan and pat down smooth to approximately one-inch thick. (Resembles a cake.)

10Cook until golden brown.

11Place a plate upside down on the cake and with care, turn the cake onto the plate. Slide the cake back into the frying pan, uncooked side down.

12Cook until well done (golden brown).

13Cut as you would a pie.

14Serve hot or cold.

15Serve as is or with tomato ketchup.
