Special Almquist Chicken Breasts

Ingredients
- 4 chicken breasts, boned and skinned
- 1 c. green grapes, halved (seedless)
- 1 c. walnuts, chopped
- 1 c. mushrooms, sliced
- 1 pt. sour cream (can be light or fat-free)
- 1 1/2 c. white wine
- 1 to 2 Tbsp. olive oil
Directions

1Prepare grapes, walnuts and mushrooms and set to the side. Clean chicken and remove all fat.

2Preheat oven to 350°.

3Saute chicken breasts in olive oil until browned on both sides.

4Place in casserole dish.

5Sprinkle grapes, walnuts and mushrooms over chicken.

6Drain excess oil from frying pan (but leave browned bits).

7Add wine and cook down about halfway on medium-high heat. Add sour cream and stir until bubbling and smooth.

8Pour over chicken and bake, covered, for 30 to 40 minutes.

9Serve over wild rice.
