Special Fried Rice

Ingredients

  • 1 1/2 cups water
  • 1 cup long grain rice, well rinsed and drained
  • 1 tablespoon VEGEMITE
  • 2 teaspoons oil
  • 1 medium onion, finely chopped
  • 1 clove garlic, crushed
  • 3 rashers bacon, chopped Rite Aid 2 For $7.00 thru 02/06
  • 1 cup frozen shrimps, thawed
  • 1 cup button mushrooms, halved
  • 1 cup frozen peas, thawed
  • 1 cup bean sprouts
  • 2 eggs, lightly beaten
  • spring onion curls to garnish

Directions

    Bring water to the boil in a medium saucepan.

    Add rice and Vegemite*, bring to the boil, then simmer, covered, 15-20 minutes until rice is tender.

    Heat oil in a frying pan or wok, stir fry onion, garlic and bacon until onion is tender.

    Add shrimps and fry 2 minutes.

    Add mushrooms, peas and bean sprouts and stir fry a further 2 minutes.

    Stir in cooked rice until well combined.

    Prepare a thin omelette with the eggs.

    Slice and gently fold into rice.

    Serve immediately garnished with spring onion.
