  • 1 apple
  • butter A bit of
  • brown sugar A bit more of
  • 3 eggs
  • 1 cup plain yogurt
  • 1/2 cup sunflower oil
  • 1 cup brown sugar
  • 1/2 cup white sugar
  • 3 cups flour
  • 2 teaspoons baking powder about 2 tsp
  • 1 teaspoon gingerbread spice cinnamon, clove, ginger, cardamom, nutmeg

    Preheat oven to 250°C (approximately 480°F).

    Peel apple, remove core and cut into slices.

    Dot the bottom of the baking dish with small pieces of butter, brown sugar and half of apple slices until well covered.

    In a large mixing bowl, beat eggs with sugar until foamy.

    Add remaining ingredients, including remaining apple slices.

    Grease the sides of pan with non-stick spray or butter, and then pour in batter.

    Bake in preheated oven for about 30 minutes.

    Let cake rest in pan for about 5 minutes.

    Carefully remove cake from pan and let cool on a wire rack.
