- 1 lb. black beans
- 1 medium onion
- 4 whole cloves
- 2 smoked sausages
- 1 Tbsp. chili powder
- 8 c. water
- 4 large sprigs cilantro
- 1 large carrot
- 1 stalk celery (with leaves)
- 2 Tbsp. olive oil
- 1 Tbsp. cumin
- 1/4 tsp. red pepper flakes
Directions

1Soak beans overnight. Drain. Rinse. Stud the onion with cloves.

2Place all ingredients in a large Dutch oven and bring to a boil. Reduce to simmer and cook until tender, about 1 1/2 hours. Remove onion, carrot, celery and cilantro. Serve on rice.
