- 1 slice gammon (200 g, 1 cm thick)
- 1 level tsp. dry mustard
- 1/2 to 1 level tsp. ground cinnamon
- 1 to 2 level Tbsp. brown sugar
- 1 small tin orange juice
- 1 level tsp. cornflour
Directions

1Wash gammon and soak in cold water for 1/2 hour.

2Mix mustard, cinnamon and brown sugar and spread on gammon.

3Put in casserole with enough orange juice to almost cover.

4Cover dish and bake until gammon is tender.

5Core apples but do not peel.

6Cut in quarters and cook gently in remainder of juice.

7Remove apples and arrange on top of gammon; keep hot.

8Thicken juice with blended cornflour.

9Serve with gammon.
