- 2 1/2 c. pecan halves
- 1/2 c. water
- 1 c. sugar
- 1 tsp. cinnamon
- 1/4 tsp. salt
- 1/2 tsp. vanilla
Directions

1Heat pecans in moderate oven at 375° for 5 minutes.

2Stir once.

3Butter sides of heavy saucepan (2-quart size).

4In saucepan, combine water, sugar, cinnamon and salt.

5Heat and stir until sugar is dissolved and mixture boils.

6Cook with stirring to soft ball stage or 236°.

7Remove from heat.

8Beat by hand for 1 minute or until mixture just begins to act creamy.

9Add vanilla and the warm nuts.

10Stir gently until nuts are well coated and mixture is creamy.

11Turn out on buttered cookie sheet or wax paper.

12Separate at once using two spoons or forks.
