- 1/2 lb. spiral macaroni
- 1 tbsp. vegetable oil
- 3/4 lb. chicken tenders
- 1 c. frozen corn
- 2 scallions
- 1 c. chunky salsa
- 1 1/2 c. Monterey Jack cheese
Directions

1Cook pasta in large pot of salted boiling water 6 to 8 minutes until al dente; drain.

2Meanwhile, heat oil in large skillet over medium-high heat.

3Saute chicken until cooked about 3 minutes.

4Stir in corn and scallions; cook 2 minutes.

5Remove from heat.

6Drain pasta.

7Return pasta to pot.

8Add chicken mixture, salsa, and 1 cup cheese.

9Toss.

10Serve sprinkled with remaining cheese.
