Ingredients

  • 2 lb. fresh spinach or 3 pkg. frozen spinach
  • 2 Tbsp. oil or butter
  • 1 onion, finely chopped
  • 1/2 c. rice (long grain)
  • 2 c. water
  • 1/2 tsp. salt
  • pepper to taste

Directions

    Wash fresh spinach in 3 rinses of cold water. If frozen, partially defrost.

    Heat oil in saucepan and fry onion on medium heat for 3 minutes.

    Add spinach.

    Sprinkle rice over spinach. Add water and seasonings.

    Bring to a boil; cover.

    Reduce heat and cook on low heat for 35 minutes.

    Stir once or twice with spoon to avoid scorching and sticking to the bottom.

    Add another cup of water if more sauce is desired.

    Serve with crusty bread.
