Ingredients
- 2 lb. fresh spinach or 3 pkg. frozen spinach
- 2 Tbsp. oil or butter
- 1 onion, finely chopped
- 1/2 c. rice (long grain)
- 2 c. water
- 1/2 tsp. salt
- pepper to taste
Directions

1Wash fresh spinach in 3 rinses of cold water. If frozen, partially defrost.

2Heat oil in saucepan and fry onion on medium heat for 3 minutes.

3Add spinach.

4Sprinkle rice over spinach. Add water and seasonings.

5Bring to a boil; cover.

6Reduce heat and cook on low heat for 35 minutes.

7Stir once or twice with spoon to avoid scorching and sticking to the bottom.

8Add another cup of water if more sauce is desired.

9Serve with crusty bread.
