- 6 eggs
- 2 (10 oz.) pkg. frozen, chopped spinach, thawed
- 2 c. herb stuffing mix
- 1 large onion, minced or finely chopped
- 3/4 c. (1 1/2 sticks) butter or margarine (at room temperature)
- 1 tsp. poultry seasoning
- salt and pepper to taste
- 1 c. grated Parmesan cheese
Directions

1Preheat oven to 350°.

2Beat eggs lightly in a large bowl.

3Add remaining ingredients and blend well with fork.

4Roll into walnut size balls.

5Place on baking sheet.

6Bake until golden, about 15 to 20 minutes.

7Serve hot.

8Recipe may be cut in half.

9Yields 2 to 3 dozen.
