Ingredients
- 4 large eggs
- 2 (10 oz.) pkg. frozen spinach, cooked and drained
- 1 c. minced onion
- 3/4 c. melted butter
- 1/2 tsp. thyme leaves
- 1/4 tsp. ground nutmeg
- 3/4 c. grated Parmesan cheese
- 1/2 tsp. salt
- 1/4 tsp. black pepper
- 2 1/2 c. crumb herbed stuffing mix
Directions

1Beat eggs in a large bowl.

2Stir in remaining ingredients except stuffing mix.

3When well blended, stir in stuffing mix and let stand 20 minutes while mixture firms slightly.

4Shape into rounded teaspoon and arrange on ungreased cookie sheet.

5Heat oven to 350°.

6Bake 20 minutes, until hot and slightly browned.

7May be cooled, wrapped and frozen.

8Just reheat on a baking sheet 10 to 15 minutes at 350°.

9Makes about 112 balls.
