Ingredients

  • 1 (6 oz.) pkg. long grain and wild rice
  • 2 (10 oz.) pkg. frozen chopped spinach, thawed
  • 2 c. (8 oz.) shredded Monterey Jack cheese
  • 1/4 c. butter or margarine, melted (can omit)
  • 1 Tbsp. chopped onion
  • 3/4 tsp. dry mustard
  • 1/2 tsp. salt

Directions

    Cook rice according to package directions.

    Press spinach between paper towels to remove excess water. Combine rice, spinach and remaining ingredients. Spoon into lightly greased 2-quart casserole. Bake, uncovered, at 350° for 35 to 40 minutes. Can be assembled ahead of time and chilled 8 hours.

    Let stand for 30 minutes at room temperature before baking. Serves 6.
