Spinach Pie Breakfast

  • 3 eggs, slightly beaten
  • 1 pkg. frozen chopped spinach
  • 1 lb. low-fat cottage cheese
  • 1/4 c. crumbled Feta cheese
  • 1 (8 oz.) pkg. shredded Mozzarella
  • 1 tsp. dill
  • 1 tsp. onion flakes
  • 1/2 tsp. salt
  • 1/2 tsp. pepper

Directions

    Cook spinach and drain thoroughly.

    Combine spinach, cheeses, eggs and seasonings.

    Pour mixture into a square 9 x 9-inch pan (nonstick).

    Bake at 350° for 35 minutes until golden on top.

    Let cool, then cut into squares, wrap and freeze.

    Reheat in a 375° oven for 10 minutes.
