- 6 to 8 large potatoes, peeled, cooked and mashed
- 1 c. (8 oz.) sour cream
- 1/4 tsp. pepper
- 2 tsp. salt
- 2 Tbsp. chopped green onion tops
- 1/4 c. margarine or butter
- 1 pkg. frozen chopped spinach, thawed and well-drained
- 1 c. shredded Cheddar cheese
Directions

1In a large bowl, combine all ingredients except cheese.

2Spoon into a greased 2-quart casserole.

3Bake, uncovered, at 400° for 15 minutes.

4Top with cheese and bake 5 minutes longer.

5Makes 6 to 8 servings.
