  • 1 (10 oz.) pkg. frozen spinach, chopped
  • 2 c. sharp Cheddar cheese, shredded
  • 2 Tbsp. flour
  • 1 c. milk
  • 2 eggs
  • 3 slices bacon
  • 1/2 tsp. salt
  • dash of pepper
  • 1 (9-inch) unbaked pie shell

Directions

    Microwave pastry shell 4 minutes.

    Cook bacon slices until crisp; drain and crumble.

    Cook spinach; drain well, pressing out water.

    Beat eggs.

    Toss cheese with flour, add spinach, milk, eggs and seasonings.

    Place crumbled bacon in bottom of crust. Pour rest of ingredients into pastry shell.

    Microwave 6 minutes or until a metal knife inserted in center comes out clean.
