Spinach Rice Casserole

Ingredients

  • 2 c. cooked brown rice
  • 1 (10 oz.) pkg. frozen chopped spinach
  • 1 c. grated Cheddar cheese
  • 1/2 medium onion, chopped
  • 1 clove garlic, minced
  • 1 Tbsp. oil
  • 1 Tbsp. soy sauce
  • 1/2 c. milk
  • salt and pepper to taste

Directions

    Saute onion and garlic in oil over medium heat for 2 minutes. Add frozen spinach; cover pan and reduce heat until spinach has thawed (do not overcook).

    Add cooked rice, cheese, milk, soy sauce and salt and pepper.

    Mix thoroughly.

    Save directly from pan or turn into a 1 1/2-quart casserole and sprinkle cheese over the top.

    Bake, uncovered, until cheese has melted (350°).

    Can be frozen and reheated later.
