Spinach Rice Casserole

Ingredients
- 2 c. cooked brown rice
- 1 (10 oz.) pkg. frozen chopped spinach
- 1 c. grated Cheddar cheese
- 1/2 medium onion, chopped
- 1 clove garlic, minced
- 1 Tbsp. oil
- 1 Tbsp. soy sauce
- 1/2 c. milk
- salt and pepper to taste
Directions

1Saute onion and garlic in oil over medium heat for 2 minutes. Add frozen spinach; cover pan and reduce heat until spinach has thawed (do not overcook).

2Add cooked rice, cheese, milk, soy sauce and salt and pepper.

3Mix thoroughly.

4Save directly from pan or turn into a 1 1/2-quart casserole and sprinkle cheese over the top.

5Bake, uncovered, until cheese has melted (350°).

6Can be frozen and reheated later.
