Spinach Ricotta Chicken

  • 2 skinless chicken breasts
  • 1 2/3 cups spinach
  • 3 1/4 tablespoons ricotta cheese
  • 1 teaspoon smoked paprika
  • pepper to taste
  • 1/2 tablespoon olive /vegetable oil
  • salt to taste

Directions

    Heat oil in a skillet and add spinach. Keep stirring and do not let it burn. Meanwhile preheat your oven to 200C (400F).

    When the spinach has reduced in volume by about a third, add the ricotta cheese and mix it well with the spinach.

    Dry pat the chicken and make incisions about 1 inch apart, halfway into the breast.

    Stuff the incisions with the ricotta and spinach mix.

    Season each breast with salt and pepper to taste and sprinkle the paprika on top.

    Stick in a greased baking pan and into the oven for 20min.
