Spinach Salad

Ingredients

  • 1 (10 oz.) bag spinach
  • 1/2 c. vegetable oil
  • 1/4 c. sugar
  • 2 Tbsp. vinegar
  • 1 tsp. salt
  • 1/4 tsp. dry mustard
  • 6 hard-boiled eggs
  • 1/2 lb. bacon, cooked and crumbled
  • 1 c. sliced water chestnuts

Directions

    Wash spinach in lukewarm water.

    Wrap well and chill in refrigerator to crisp.

    Combine oil, sugar, vinegar, onion, salt and mustard; beat until dressing is thick and syrupy and sugar is dissolved.

    Tear spinach into bite size pieces.

    Add the bacon, water chestnuts and 4 of the boiled eggs (chopped).

    Pour dressing over all; let stand 1/2 hour.

    Slice remaining eggs and use to garnish top of salad.
