  • 4 slices bacon, fried crisp
  • 1 Tbsp. bacon drippings
  • 4 Tbsp. olive oil
  • 3 Tbsp. wine vinegar
  • 1 lb. raw spinach, washed and drained
  • 2 hard-boiled eggs, sliced
  • 1 Tbsp. sugar
  • 1 small white onion, cut into thin rings
  • black pepper
  • salt to taste

    Crumble bacon; drain again on paper.

    Combine bacon drippings, olive oil, vinegar and sugar in jar.
