  • 2 (10 oz. each) pkg. frozen chopped spinach, thawed
  • 3 Tbsp. butter or margarine
  • 1 small onion, chopped
  • 1/4 lb. mushrooms, sliced
  • 4 eggs
  • 1/4 c. fine dry bread crumbs
  • 1 (10 3/4 oz.) can cream of mushroom soup
  • 1/4 c. grated Parmesan cheese
  • 1/8 tsp. each: pepper, basil and oregano

    Squeeze out as much moisture from spinach as possible.

    Set aside.

    Melt butter in skillet.

    Add onion and mushrooms; cook, stirring, until soft.

    In bowl, beat eggs lightly; stir in onion mixture, bread crumbs, soup, 2 tablespoons cheese, pepper, basil, oregano and spinach.

    Pour into well greased 9-inch square baking pan; sprinkle with remaining cheese.

    Bake in a 325° oven for 35 minutes or until edges begin to brown.

    Serve warm; or let cool, cover, refrigerate and serve cold.
