Spinach Stuffed Artichokes

  • 1 cup shredded cheddar cheese
  • 1/2 cup italian bread crumbs
  • 2 tbsp dried oregano
  • 15 cherry tomatoes, thin sliced
  • 2 tsp minced garlic
  • 1 lb fresh, chopped baby spinach
  • 1/2 onion, fine chopped
  • 2 tbsp olive oil, divided
  • 4 artichoke bottoms, rinsed n drained (precooked or marinated works great)
  • 1/2 tbsp water

    In a skillet heat 1 tbl.

    olive oil add onion, saute 5 minutes, or until translucent and soft.

    Stir in spinach, water and garlic, and cook 3~5 minutes, or until most of liquid has evaporated.

    Remove from heat.

    stir in cheddar cheese.

    Season with salt and pepper.

    Cool 10 minutes, or until easy to handle.
