Spinach with Pine Nuts

- 4 teaspoons olive oil
- 4 cloves garlic, minced
- 1 lb spinach leaves, well rinsed and coarsely chopped
- 4 teaspoons lemon juice
- black pepper (to taste)
- salt (to taste)
- 2 tablespoons toasted pine nuts
Directions

1In a large deep skillet cook garlic in the oil for about 1 minute; do not burn.

2Add the spinach in batches, and cooked until just wilted and bright green, about 5 minutes total.

3Remove skillet from heat and add the lemon juice and season to taste.

4Serve garnished with toasted pine nuts.
