Split Pea Soup

Ingredients

  • 1 c. split peas
  • 1 small ham hock
  • 2 qt. water
  • 2 medium sized carrots
  • 1/2 small onion, finely chopped
  • salt to taste

Directions

    Wash peas and soak overnight in enough water to cover.

    In the morning, boil the ham hock in water for 1/2 hour.
  3. 3
    Add the peas and soaking water to the ham hock kettle, cover and boil slowly until the peas are mushy, about 1 hour.

    Remove the ham hock.

    Scrape and slice carrots and add, with onions, to the cooked peas.

    Salt if necessary.

    Cook for another 30 minutes.

    If there is meat on the ham hock, chop fine and return to soup.
