Split Pea Soup

Ingredients
- 1 c. split peas
- 1 small ham hock
- 2 qt. water
- 2 medium sized carrots
- 1/2 small onion, finely chopped
- salt to taste
Directions

1Wash peas and soak overnight in enough water to cover.

2In the morning, boil the ham hock in water for 1/2 hour.

3Add the peas and soaking water to the ham hock kettle, cover and boil slowly until the peas are mushy, about 1 hour.

4Remove the ham hock.

5Scrape and slice carrots and add, with onions, to the cooked peas.

6Salt if necessary.

7Cook for another 30 minutes.

8If there is meat on the ham hock, chop fine and return to soup.

9Serves 6.
