Split Pea Soup

Ingredients
- 1 lb. split peas
- 2 potatoes
- 2 large carrots, trimmed and peeled
- 1 Tbsp. olive oil
- 1/2 lb. Polish sausage (kielbasa), cut into 1/2-inch cubes
- 1 onion, coarsely chopped
- 1 Tbsp. garlic, finely minced
- 12 c. chicken broth
- salt and pepper to taste
Directions

1Rinse the peas and drain well.

2Set aside.

3Peel the potatoes and cut into 1/4-inch cubes.

4Set aside in cold water.

5Cut carrots into 1/4-inch dice.

6Set aside.

7Heat oil in a kettle and add the sausage pieces.

8Cook about 1 minute and add the onion and garlic.

9Cook, stirring, about 1 minute.

10Add the carrots.

11Cook, stirring, about 2 minutes.

12Drain the peas and potatoes and add them.

13Add the chicken broth, salt and pepper.

14Bring to boil and cook about 1 hour and 15 minutes or until peas have become quite liquid.

15Serve hot.
