- ham shank
- 1 c. split peas
- 1 medium onion, chopped
- 1 medium carrot, chopped
- 1 Tbsp. dried parsley
- 1 tsp. celery salt
- dash of pepper
- cold water to cover
- salt to taste
Directions

1Place all ingredients in large kettle.

2Bring to boil, reduce heat and simmer 2 hours.

3Lift out ham shank and when cool, pick lean meat from bone and return to soup.

4Discard bone and fat. Add salt if necessary.

5Makes 4 to 6 servings.
