Split Pea Soup

Ingredients
- 1 lb. split peas
- 3 qt. water
- 1 ham bone
- 2 carrots, sliced
- 1 large onion, chopped
- 1 stalk celery, chopped
- salt and pepper to taste
Directions

1Wash peas. Add cold water, vegetables and ham bone and simmer for 3 hours or until mixture is thick.

2Remove ham bone.

3Force peas through coarse sieve and season to taste.

4If needed, dilute with milk.

5Serve very hot with toasted croutons.
