  • 1 lb. split peas
  • 2 qt. water
  • 1 medium onion, diced
  • 1 large carrot, diced
  • 1 branch celery, sliced thinly
  • 1 sprig parsley
  • 1/4 tsp. white ground pepper
  • salt to taste
  • 1/4 lb. precooked ham, diced
  • hard-boiled egg, sliced
  • paprika

    Wash split green peas and add to 2 quarts boiling water.

    Add diced vegetables.

    Cover pot and simmer on low temperature about 1 hour.

    Add ham pieces.

    Simmer about another 30 minutes.

    Peas should look mushy.

    Soup will need to be stirred occasionally to prevent sticking.
