  • 1 lb split peas, rinsed
  • 8 cups water
  • 1 12 lbs smoked ham hocks or 1 12 lbs smoked pork shanks
  • 1 teaspoon salt
  • 2 -3 carrots, diced
  • 2 stalks celery, diced
  • 1 onion, chopped
  • 12 teaspoon allspice

    In a large soup pot, simmer all ingredients, covered, for 1-1/2 hours.

    Remove hocks from pot.

    Allow to cool slightly.

    Remove meat from hocks.
