- 1 c. boiling water
- 2/3 c. cornmeal
- 2 tsp. butter
- 2 egg yolks
- 2/3 c. buttermilk
- 3/4 tsp. salt
- 1/2 tsp. sugar
- 3/4 tsp. baking powder
- 1/8 tsp. baking soda
- 2 egg whites
Directions

1Pour boiling water over cornmeal.

2Stir and let cool.

3Add butter and egg yolks.

4Stir until thoroughly blended.

5Stir in buttermilk.

6Combine salt, sugar, baking powder and soda.

7Add to cornmeal mixture.

8Beat egg whites to soft peaks.

9Fold into cornmeal mixture.

10Pour into greased 1-quart baking dish.

11Bake for 45 to 50 minutes until set at 350°.
