- 1/2 c. cornmeal
- 2 Tbsp. quick cooking tapioca (optional)
- 2 c. milk
- 2 Tbsp. butter or margarine
- 1/2 tsp. salt
- 2 eggs, separated
Directions

1Combine cornmeal, tapioca, milk, fat and salt.

2Cook over boiling water, stirring frequently, until thickened.

3Remove from heat; cool slightly.

4Beat egg yolks slightly; beat into the mixture.

5Fold in stiffly beaten egg whites.

6Pour into greased baking dish.

7Bake at 375° for 45 minutes.

8Serve from the baking dish.
