Ingredients

  • 3 c. yellow squash
  • 4 strips bacon, cooked crisp
  • 1/4 c. evaporated milk
  • salt and pepper to taste
  • 1 small bunch spring onions
  • 1/4 stick margarine
  • bread crumbs to cover top

Directions

    Boil squash until tender, then mash.

    Saute onion tops and bottoms.
  3. 3
    Crumble bacon and mix with squash, onions, salt and pepper to taste and add evaporated milk.

    Turn into baking dish. Top with bread crumbs and butter.

    Bake at 300° for approximately 45 minutes.
