- 1 1/2 c. all-purpose flour
- 1 tsp. soda
- 1/2 tsp. salt
- 1/2 tsp. nutmeg
- 1 c. cooked, mashed acorn or butternut squash
- 1 c. sugar
- 1/4 tsp. baking powder
- 1/2 tsp. cinnamon
- 2 Tbsp. milk
- 2 eggs, beaten
- 1/4 c. melted margarine
Directions

1Combine flour, soda, salt, nutmeg, sugar, baking powder, cinnamon and milk; stir lightly and set aside.

2Combine squash, eggs and margarine; mix well.

3Add to flour mixture, stirring until blended.

4Pour into a greased and floured 9 x 5 x 3-inch loaf pan.

5Bake at 350° for 50 to 60 minutes or until bread tests done.

6Yield: 1 loaf.
