Ingredients

  • 1 1/2 c. all-purpose flour
  • 1 tsp. soda
  • 1/2 tsp. salt
  • 1/2 tsp. nutmeg
  • 1 c. cooked, mashed acorn or butternut squash
  • 1 c. sugar
  • 1/4 tsp. baking powder
  • 1/2 tsp. cinnamon
  • 2 Tbsp. milk
  • 2 eggs, beaten
  • 1/4 c. melted margarine

Directions

    Combine flour, soda, salt, nutmeg, sugar, baking powder, cinnamon and milk; stir lightly and set aside.

    Combine squash, eggs and margarine; mix well.

    Add to flour mixture, stirring until blended.

    Pour into a greased and floured 9 x 5 x 3-inch loaf pan.

    Bake at 350° for 50 to 60 minutes or until bread tests done.

    Yield: 1 loaf.
