  • 2 1/2 c. flour
  • 1/2 c. cocoa
  • 2 1/2 tsp. baking powder
  • 1 1/2 tsp. soda
  • 1/4 c. margarine
  • 2 c. sugar
  • 2 tsp. vanilla
  • 3 eggs, beaten
  • 1/2 c. milk
  • 1/2 c. coconut
  • 2 c. zucchini squash, grated
  • 1 tsp. cinnamon
  • 1 tsp. allspice
  • 1 tsp. nutmeg

    Sift all dry ingredients together.

    Cream margarine, sugar and vanilla.

    Beat in eggs and blend.

    Stir in squash and alternate additions of milk and dry ingredients.

    Stir in coconut.

    Bake at 350° for 1 hour in Bundt pan.
