- 2 cups all-purpose flour
- 2 tablespoons cornstarch
- 1 teaspoon baking soda
- 1 teaspoon ground cardamom
- 1 teaspoon ground ginger
- 1/2 teaspoon cinnamon
- 1/2 teaspoon salt
- 4 tablespoons unsalted butter, at room temperature
- 1 cup sugar
- 3 large eggs
- 1 teaspoon pure vanilla extract
- 1 cup Squash Puree
- 1/4 cup buttermilk
Directions

1Preheat the oven to 350.

2Coat a 9-by-5-inch loaf pan with cooking spray.

3Sift the flour, cornstarch, baking soda, cardamom, ginger, cinnamon and salt.

4Using an electric mixer, beat the butter at high speed until fluffy.

5Gradually beat in the sugar.

6Add the eggs, 1 at a time, beating between additions.

7Beat in the vanilla.

8At low speed, beat in the flour mixture, alternating with the Squash Puree and buttermilk.

9Scrape the batter into the prepared pan and smooth the top.

10Bake for 55 minutes, or until a toothpick comes out clean.

11Let the cake cool in the pan for 15 minutes.

12Turn it out onto a rack, then invert and let cool completely.
