- 2 lb. zucchini, chopped
- 1 medium onion, sliced
- 3 Tbsp. butter
- 3 eggs, beaten
- 1 (10 3/4 oz.) can cream of mushroom soup
- salt and pepper to taste
- 1/2 c. plain bread crumbs
- 1/2 c. Parmesan cheese
Directions

1Preheat oven to 350°.

2Boil zucchini and onion together, then drain.

3Combine butter, eggs, cream of mushroom soup, salt and pepper.

4Mix in zucchini and onion.

5Pour into 1 1/2-quart buttered casserole dish.

6Mix together bread crumbs and Parmesan cheese. Sprinkle crumb mixture over zucchini casserole.

7Bake 30 to 40 minutes at 350°.
