Squash Casserole

  • 10 oz. pkg. frozen yellow squash
  • 1 c. chopped onion
  • 1 Tbsp. margarine
  • 8 oz. sour cream
  • 1 can cream of chicken soup
  • 6 oz. pkg. chicken stuffing mix
  • 6 Tbsp. melted margarine

Directions

    Cook squash; drain well.

    Saute onion in 1 tablespoon margarine.

    Combine squash, onion, sour cream and soup.

    Combine stuffing mix and melted margarine.

    Stir well.

    Add 3/4 stuffing mixture to squash, folding gently.

    Spoon into a greased 2-quart casserole.

    Sprinkle remaining stuffing on top.

    Bake at 350° for 20 minutes until bubbly.
