  • 6 medium squash, sliced
  • 3 carrots, sliced
  • 1 onion, sliced
  • 1 can cream of mushroom soup
  • 4 oz. sour cream
  • Pepperidge Farm stuffing mix
  • 1/2 stick melted margarine

Directions

    Boil squash, carrots and onion; drain and set aside.

    Mix soup and sour cream; set aside.

    Mix stuffing with margarine; line casserole dish with the mixture.

    Alternate layers of vegetables and soup mixture, ending with soup.

    Sprinkle more stuffing on top. Bake for 30 minutes at 325°.
