Squash Casserole

Ingredients

  • 2 lb. yellow squash, washed and cut
  • 1 small onion, chopped
  • 1/2 green pepper, chopped
  • 1/2 c. butter or margarine
  • 2 eggs, lightly beaten
  • 1/2 c. milk
  • 1/2 c. grated sharp Cheddar cheese
  • 1 tsp. sugar
  • 6 soda crackers, in crumbs
  • cracker crumbs (additional)

Directions

    Cook squash in boiling salted water to cover until just tender.

    Drain and set aside.

    Saute onion and green pepper in butter until tender.
  4. 4
    Add to squash, eggs, milk, cheese, sugar and crackers.

    Add onion and green pepper to squash mixture.

    Spoon into greased casserole and cover with additional cracker crumbs. Bake at 325° for 1 hour.
