- 2 lb. yellow squash, washed and cut
- 1 small onion, chopped
- 1/2 green pepper, chopped
- 1/2 c. butter or margarine
- 2 eggs, lightly beaten
- 1/2 c. milk
- 1/2 c. grated sharp Cheddar cheese
- 1 tsp. sugar
- 6 soda crackers, in crumbs
- cracker crumbs (additional)
Directions

1Cook squash in boiling salted water to cover until just tender.

2Drain and set aside.

3Saute onion and green pepper in butter until tender.

4Add to squash, eggs, milk, cheese, sugar and crackers.

5Add onion and green pepper to squash mixture.

6Spoon into greased casserole and cover with additional cracker crumbs. Bake at 325° for 1 hour.
