Squash Casserole

Ingredients
- 2 lb. squash (yellow and/or Italian)
- 1 Tbsp. sugar
- 1/2 c. mayonnaise
- 1/2 c. onion
- 1/4 c. green pepper (optional)
- 1 egg, beaten
- 3/4 c. grated Cheddar cheese
- 1/2 c. pimento (optional)
- 1/2 stick margarine
- 1 can cream of chicken soup (10 3/4 oz.)
Directions

1Cook squash and drain.

2Saute onion and pepper in 1 tablespoon of the margarine.

3Mix other ingredients together with the onion and pepper; gently fold in the squash.

4Top with another 3/4 cup of grated Cheddar cheese (in addition to the 3/4 of cheese already in the mixture) and cracker crumbs which have been buttered with margarine or cooking oil.

5Bake 45 minutes at 350°.
