Squash Casserole

Ingredients

  • 2 lb. squash (yellow and/or Italian)
  • 1 Tbsp. sugar
  • 1/2 c. mayonnaise
  • 1/2 c. onion
  • 1/4 c. green pepper (optional)
  • 1 egg, beaten
  • 3/4 c. grated Cheddar cheese
  • 1/2 c. pimento (optional)
  • 1/2 stick margarine
  • 1 can cream of chicken soup (10 3/4 oz.)

Directions

    Cook squash and drain.

    Saute onion and pepper in 1 tablespoon of the margarine.

    Mix other ingredients together with the onion and pepper; gently fold in the squash.

    Top with another 3/4 cup of grated Cheddar cheese (in addition to the 3/4 of cheese already in the mixture) and cracker crumbs which have been buttered with margarine or cooking oil.

    Bake 45 minutes at 350°.
