Squash Casserole

Ingredients

  • 1 1/2 lb. yellow squash
  • 1 small jar chopped pimiento
  • 1 large chopped onion
  • 8 oz. pkg. herb stuffing or seasoned croutons
  • 1 c. sour cream
  • 1 can cream of chicken soup
  • 4 or 5 medium grated carrots

Directions

    Cook squash in salt water.

    Drain, mash and add other ingredients, holding back 1/2 of stuffing.

    Mix well and put in 2-quart casserole.
  4. 4
    Melt 1 stick oleo and mix with remaining stuffing and use as topping for casserole.
