Squash Casserole

Ingredients

  • 2 c. squash (about 2 lb.)
  • 1 c. milk
  • 2 c. cracker crumbs
  • 1 tsp. salt
  • 3/4 c. chopped onions
  • 2 eggs, beaten
  • 1 c. grated Cheddar cheese
  • 3/4 stick margarine
  • 1/4 tsp. black pepper
  • 1 small jar pimentos

Directions

    Cook squash and drain.

    Add butter, salt, pepper, pimentos and milk and mix, then add well beaten eggs, onions, cheese and cracker crumbs.

    Pour into greased casserole dish and bake at 375° for about 40 minutes.
