- 3 lb. fresh yellow squash
- 2 Tbsp. onion, chopped
- 2 medium carrots, grated
- 1 can cream of chicken soup
- 1 c. sour cream
- 1 (7 oz.) pkg. Pepperidge stuffing mix
- salt and pepper to taste
- 2 oz. pimentos, chopped and drained (optional)
Directions

1Slice and cook squash in a little water; drain and mash.

2Add onion, carrots, soup and sour cream (and pimentos); blend.

3Pour into greased casserole.

4Top with stuffing mix (and peanuts). Bake at 350° for 30 minutes or until it bubbles.

5Serves 8.
