Squash Casserole

  • 3 lb. fresh yellow squash
  • 2 Tbsp. onion, chopped
  • 2 medium carrots, grated
  • 1 can cream of chicken soup
  • 1 c. sour cream
  • 1 (7 oz.) pkg. Pepperidge stuffing mix
  • salt and pepper to taste
  • 2 oz. pimentos, chopped and drained (optional)

Directions

    Slice and cook squash in a little water; drain and mash.

    Add onion, carrots, soup and sour cream (and pimentos); blend.

    Pour into greased casserole.

    Top with stuffing mix (and peanuts). Bake at 350° for 30 minutes or until it bubbles.
