  • 3 medium yellow squash
  • 1 Tbsp. oleo
  • 1/2 tsp. salt
  • 1 beaten egg yolk
  • about 1/4 lb. fried, drained and crumbled sausage
  • bread crumbs and oleo (for top)
  • 1/4 c. sour cream
  • 1/2 c. grated Cheddar cheese
  • 1/8 tsp. pepper
  • 1 Tbsp. chopped onion

Directions

    Cook squash until tender; drain. Combine sour cream, oleo, cheese, salt and pepper. Stir over low heat until melted. Take off. Add egg, onion and sausage. Add the squash. Place in casserole. Top with bread crumbs and oleo. Bake at 350° for 20 to 25 minutes.
